The short answer: a Vino de Pago is a wine from one single estate that has its own protected designation of origin, like a one-property appellation. The category came with Spain's 2003 wine law. The wine must come from the estate's own vineyards, and the estate is judged on its own soil and climate, not on its region's rules.
Spain's Ministry of Agriculture listed 23 Vinos de Pago for the 2021/2022 season. More than half are in Castilla-La Mancha. The rest are in Navarra, the Valencia region, Castilla y León and Aragón. That map is what the questions below test, at Advanced depth.
