Coravin Sparkling review: does it keep Champagne fizzy?

The short answer: Coravin Sparkling is a stopper and a small charger that refills an opened bottle of sparkling wine with CO₂, putting back the pressure that keeps the bubbles in. Coravin says it keeps Champagne, Prosecco and Cava fresh for at least four weeks. It is worth it if you often open good sparkling wine and drink only a glass or two. If you usually finish the bottle within a day or two, a good Champagne stopper is enough.
The problem it solves
Open a bottle of Champagne, pour two glasses, and the rest starts to fade. Once the cork is out, the gas that makes the bubbles keeps escaping, and by the next evening the wine is flatter and tired. Every sommelier who has run sparkling wine by the glass knows the end-of-month count: half-full bottles that went flat. That is why so many lists pour the cheapest bubbles by the glass. The waste hurts less.
How it works
- Pour a glass as normal.
- Seal the bottle with the Coravin Sparkling stopper.
- Charge it. The charger, loaded with a CO₂ capsule, gives the bottle a burst of gas. A small gauge on the stopper shows when the bottle is pressurised again.
- Store it in the fridge until the next glass.
Don't confuse it with the original Coravin, which pours still wine through a needle without pulling the cork and uses argon. That system is not for sparkling wine. Coravin Sparkling is a separate product, announced in June 2021.
What Coravin promises
- At least four weeks of freshness after opening, by Coravin's own claim (its website, checked October 2026). At launch in 2021, the claim was two weeks.
- Up to seven bottles per CO₂ capsule.
- In the box: one charger, one stopper, two CO₂ capsules and a bottle sleeve.
- Any sparkling wine bottle: Champagne, Prosecco, Cava and the rest, with the same stopper.
One safety note from Coravin itself: use the sleeve, or a similar cover, because a bottle under pressure can break. Sparkling wine bottles are built for pressure, but treat a charged bottle with respect.

For a restaurant, the maths is simple: every flat bottle is margin poured down the sink. A system that keeps an expensive Champagne fresh lets you sell it by the glass, and guests notice when the by-the-glass list is more than one cheap fizz. That is how you sell the feeling: a beautiful glass of Champagne on an ordinary night.
